The Fiano was hand-picked from the Dam block on Gaffney Road, then taken just round the corner to the winery to be pressed off skins and fermented in stainless steel temperature-controlled tanks (with a small proportion being fermented in seasoned barriques) before settling and bottling. This wine is fresh, textured mid-weight wine with hints of citrus and anise on the nose (with a hint of tropical fruit) and the merest whiff of gun smoke. You will find a little pineapple character on the palate too. Medium-bodied but FRESH! Chill and serve.
